Ingredients

  • For the crust:
  • 1 ½ cups all-purpose flour

  • ½ cup cold unsalted butter

  • ¼ cup granulated sugar and ice water each

  • For the Filling:
  • 2 cups mashed sweet potatoes

  • 1 cup granulated sugar

  • 1 teaspoon ground cinnamon

  • ½ teaspoon ground nutmeg

  • ¼ teaspoon ground ginger and salt each

  • 3 large eggs

  • 1 cup evaporated milk

  • 1 teaspoon vanilla extract

Directions

  • STEP 1: Start by making the pie crust
  • Take a large bowl to mix flour and sugar. Now add cold butter pieces and mix it well until the mixture resembles coarse crumbs. Even if the mixture is slightly rough with some butter chunks in between, relax; it will make the crust flaky.
  • Now, slowly add ice water and start mixing until the dough comes together but isn’t wet.
  • Next, dust your countertop with some flour, bring the dough over, and mix lightly for a minute. Shape it, cover it with plastic wrap, and refrigerate for half an hour, allowing the butter to chill.
  • STEP 2: Let’s prepare the filling while the dough is chilling.
  • Peel and cube the sweet potatoes and boil them until tender. Drain them and let them cool a bit before mashing them until smooth. You can either use a masher or show the magic of your fingers.
  • Now, mix the mashed sweet potatoes with sugar, cinnamon, nutmeg, ginger, and salt in a large bowl. Adding spices gives that classic taste to the dish.
  • Take another bowl, beat the eggs, and later whisk them into the sweet potato mixture. Add evaporated milk and vanilla extract and make the batter smooth.
  • STEP 3: Preheat your oven to 375°F.
  • Now, take the chilled dough out of the refrigerator and roll it evenly to fit in a 9-inch pie dish. Transfer the dough to the dish, pressing it into the bottom and up the sides.
  • Now add the sweet potato filling to the prepared crust and smooth it gently.
  • Finally, bake the pie in the preheated oven for nearly an hour or until the filling is set and the crust is golden brown.
  • STEP 4: Once done:
  • Let the sweet potato pie cool on a wire rack at least for an hour or more before slicing.
  • Serve your sweet potato pie in generous slices. You can top them with whipped cream or a scoop of vanilla ice cream or even simple.

Notes

  • If you have less time, you can use store-bought pie crust.
  • Use brown sugar instead of white sugar, as it adds richness to the dish.
  • Make sure the sweet potatoes are mashed into a smooth paste with no lumps.
  • While baking, insert a knife into the center of the pie, and if it’s clean, it’s done.
